How to prepare spaghetti carbonara

Carbonara (Italian: [karboˈnaːra]) is a pasta dish made with eggs, hard cheese, cured pork, and black pepper. The dish took its modern form and name in the middle of the 20th century.

I'm a Nigerian but I love Italian dishes.????????

Here's a recipe for a classic Italian dish called Spaghetti Carbonara:

Ingredients:

- 1 pound spaghetti

- 6 ounces pancetta or bacon, diced

- 4 cloves garlic, minced

- 2 large eggs and 2 large yolks, room temperature

- 1 cup grated Parmesan cheese

1 ounce (about 1/3 packed cup) grated pecorino Romano, plus additional for serving

- Salt and pepper, to taste

- Chopped parsley, for garnish

Instructions:

1. Cook the spaghetti according to package instructions until al dente.

2. While the spaghetti is cooking, heat a large skillet over medium heat. Add the pancetta or bacon and cook until crispy. Add the garlic and cook for another minute.

3. In a small bowl, whisk together the eggs and Parmesan cheese.

4. When the spaghetti is done, reserve 1 cup of the pasta water and drain the rest.

5. Add the spaghetti to the skillet with the pancetta or bacon and garlic. Toss to combine.

6. Remove the skillet from the heat and add the egg mixture. Toss quickly to combine, using the residual heat to cook the eggs.

7. If the pasta seems dry, add a splash of the reserved pasta water to loosen it up.

8. Season with salt and pepper to taste.

9. Serve hot, garnished with chopped parsley.
